Caramelize the Onions
Slice the onion thinly. In a skillet, melt 1 tablespoon of butter over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are soft and caramelized, about 15-20 minutes. Remove from heat and set aside.

Prepare the Smash Patties
Divide the ground beef into two equal portions. Season both sides with salt and pepper. Heat a skillet over high heat and add a little oil. Once hot, add the beef portions and smash them down with a spatula. Cook for about 3-4 minutes until a crust forms, then flip and place a slice of Velveeta and Gruyère cheese on each patty. Cook for another 2-3 minutes until the cheese is melted.

Grill the Buns
In a separate pan, melt the remaining tablespoon of butter. Place the grilled cheese buns cut side down in the pan and toast until golden brown.

Assemble the Melt
Spread 1000 Island dressing on the bottom half of each toasted bun. Place the cheese-covered smash patties on top, followed by the caramelized onions. Top with the other half of the grilled cheese bun.

Serve
Cut the Taphouse Melt in half and serve immediately with extra 1000 Island dressing on the side.
