    Prepare the Fries

    If using frozen fries, cook according to package instructions. If using fresh, cut potatoes into fries, rinse, and dry thoroughly.

    Heat the Oil

    In a large pot or deep fryer, heat oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add fries to the hot oil and fry until golden brown, about 5-7 minutes. Remove from oil and drain on paper towels. Season with salt.

    Form the Patties

    While fries are cooking, divide the ground beef into two equal portions and form loosely packed balls.

    Cook the Burgers

    In a hot skillet or griddle, place the beef balls and smash them down with a spatula to form thin patties. Season with salt and pepper. Cook for about 2-3 minutes on one side.

    Flip and Add Cheese

    Flip the patties, place a slice of cheese on each, and cook for an additional 1-2 minutes, until cheese is melted.

    Toast the Buns

    In the same skillet, toast the burger buns until golden brown.

    Assemble the Burger

    On the bottom bun, layer lettuce, tomato, onion, and the cooked patty with melted cheese. Add ketchup and place the top bun.

    Serve the smash burgers with a side of hot fries.
