    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Scrub the russet potatoes under cold water, then pierce each potato a few times with a fork. Rub them with olive oil and sprinkle with salt and black pepper.

    Bake the Potatoes

    Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork. Remove from the oven and let cool slightly.

    Scoop the Potatoes

    Once the potatoes are cool enough to handle, cut each one in half lengthwise. Scoop out the insides, leaving about 1/4 inch of potato on the skin. Save the scooped potato for another use.

    Add Fillings

    Brush the insides of the potato skins with olive oil and sprinkle with salt and pepper. Place them skin-side down on a baking sheet. Fill each skin with shredded cheddar cheese and bacon bits.

    Final Bake

    Return the filled potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Serve

    Remove from the oven and top with chopped scallions. Serve hot with sour cream and ranch dressing on the side.
