    Prep the Ingredients

    Slice the bell peppers and onion. If using steak, thinly slice it against the grain. If using chicken, cut it into thin strips.

    Cook the Meat

    In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced steak or chicken and season with salt and black pepper. Cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.

    Cook the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell peppers and onions. Sauté until they are soft and slightly caramelized, about 5 minutes.

    Combine Ingredients

    Return the cooked steak or chicken to the skillet with the vegetables. Stir to combine. Add the cubed Velveeta cheese and stir until melted and everything is well combined.

    Prepare the Bread

    While the cheese is melting, preheat your oven to 350°F (175°C). Slice the French bread rolls in half and place them on a baking sheet.

    Toast the French bread in the oven for about 5 minutes, or until slightly crispy.

    Spoon the cheesesteak mixture onto the toasted French bread halves. Serve immediately.
