    Caramelize the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and sauté until they are caramelized, stirring frequently. This should take about 25-30 minutes.

    Add the minced garlic and cook for an additional 2 minutes. Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom.

    Stir in the beef broth, thyme, bay leaf, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.

    Prepare the Bread

    While the soup is simmering, preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and toast them in the oven until golden brown, about 5-7 minutes.

    Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, place a toasted baguette slice on top of each bowl, and sprinkle generously with Gruyere cheese.
