Fry the Potatoes
Heat the vegetable oil in a deep fryer or a large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-5 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt.

Make the Coleslaw
In a large bowl, combine shredded cabbage and grated carrot. In a separate bowl, mix mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Pour dressing over the cabbage mixture and toss well. Refrigerate until serving.

Prepare the Fish Batter
In a bowl, combine flour, cornstarch, baking powder, salt, black pepper, and Cajun seasoning. Gradually whisk in the beer until the batter is smooth.

Fry the Fish
Dip each pollock fillet into the batter, allowing excess to drip off. Carefully place the fillets in the hot oil and fry until golden brown, about 4-5 minutes. Remove and drain on paper towels.
