1. Prepare the Chocolate Ganache

Chop the dark chocolate and place it in a mixing bowl. In a small saucepan, heat the heavy cream until just simmering. Pour the hot cream over the chopped chocolate, let it sit for a minute, then stir until smooth. Add a pinch of salt and mix well.

2. Assemble the Base

In a round cake tin, layer the Maria's cookies at the bottom. Pour half of the chocolate ganache over the cookies, spreading it evenly. Allow it to set in the refrigerator for about 30 minutes.

3. Prepare the Dark Cherry Whipped Cream

In a blender, combine the dark cherries, sugar, and vanilla extract. Blend until smooth. In a separate bowl, whip the remaining heavy cream until soft peaks form, then gently fold in the cherry mixture until well combined.

4. Finish the Tarta

Once the ganache has set, spread the cherry whipped cream over the top. Drizzle the remaining ganache over the whipped cream for decoration. Return to the refrigerator to chill for at least one hour before serving.
