In a blender, combine the dark cherries, sugar, and vanilla extract. Blend until smooth. In a separate bowl, whip the remaining heavy cream until soft peaks form, then gently fold in the cherry mixture until well combined.
4. Finish the Tarta
Once the ganache has set, spread the cherry whipped cream over the top. Drizzle the remaining ganache over the whipped cream for decoration. Return to the refrigerator to chill for at least one hour before serving.
