Preparation of Steak Roulade

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Filling

    In a bowl, mix chopped Iberico chorizo, grated Manchego cheese, and minced garlic.

    Prepare the Steak

    Lay the skirt steak flat, season with salt and black pepper. Spread the filling evenly over the steak.

    Roll the Steak

    Carefully roll the steak tightly from one end to the other. Secure with kitchen twine or toothpicks.

    Sear the Roulade

    In a skillet, heat olive oil over medium-high heat. Sear the roulade on all sides until browned, about 5-7 minutes.

    Transfer the roulade to a baking dish and bake in the preheated oven for 15-20 minutes or until desired doneness is reached.

Cilantro-Lime Rice

    In a saucepan, bring water to a boil. Add white rice, cover, and reduce heat to low. Cook for 15-20 minutes until water is absorbed.

Grilled Veggies

    Slice bell peppers, zucchini, and red onion. Toss with olive oil, salt, and black pepper.
