    Prepare the Swordfish

    Preheat the grill to medium-high heat. Brush the swordfish steaks with olive oil and season with salt and black pepper.

    Grill the Swordfish

    Place the swordfish on the grill and cook for about 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork.

    Make the Piquillo Salsa Fresca

    In a bowl, combine the piquillo peppers, diced tomatoes, diced red onion, and lime juice. Mix well and set aside.

    Cook the Squash

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced yellow squash and sauté for about 5-7 minutes or until tender.

    Prepare the Chive Parsnip Puree

    In a pot, boil the diced parsnips in salted water until tender (about 15 minutes). Drain and return to the pot. Add butter and chopped chives, then use a blender to puree until smooth.

    Plate the grilled swordfish topped with piquillo salsa fresca, alongside the sautéed yellow squash and chive parsnip puree.
