Prepare the crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and salt. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 8-10 minutes, then remove from oven and let cool.

Make the cheesecake filling
In a large mixing bowl, beat the cream cheese and goat cheese together until creamy and smooth. Add the granulated sugar and vanilla extract, and mix until well combined. Incorporate the eggs one at a time, mixing on low speed after each addition. Finally, fold in the pureed peaches until evenly distributed.

Assemble and bake
Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

Chill and serve
After cooling, refrigerate the cheesecake for at least 4 hours or overnight. Before serving, drizzle with strawberry balsamic for added flavor.
