Rinse 1 cup whole black lentils thoroughly until water runs clear. For shorter cooking time and creamier texture, soak lentils in cold water for 4–6 hours or overnight, then drain.
Place lentils in a heavy-bottomed pot or pressure cooker with 4 cups water, 1/4 tsp turmeric and 1/2 tsp salt. If using a pressure cooker, cook 8–10 whistles on medium heat (about 25–30 minutes total) until lentils are very soft and beginning to break down. If using a pot, bring to a boil, skim any foam, then reduce heat to low and simmer, partially covered, for 60–75 minutes until very tender, adding water as needed to keep lentils submerged.

Add 1 cup finely chopped onion and sauté, stirring often, until translucent and beginning to brown at the edges, about 6–8 minutes.
Stir in 1 tsp grated ginger, 2 minced garlic cloves and 1 slit green chili (if using). Cook 1–2 minutes until raw aroma disappears.
Add 2 cups finely chopped tomatoes and cook over medium heat until tomatoes break down and oil begins to separate from the masala, about 8–12 minutes. Mash larger tomato pieces with the back of a spoon for a smoother sauce.
Stir in 1/2 tsp red chili powder, 1 tsp coriander powder and 1/2 tsp ground cumin. Cook another 2–3 minutes to toast the spices and remove their raw edge. Add 1/2 tsp salt here, adjusting later after combining with dal.
If the tomato base looks too thick, add up to 1/2 cup water to loosen; simmer 1–2 minutes to blend flavors.
Tempering (Tadka)
Add 4 thinly sliced garlic cloves and 1 dried red chili (if using). Fry, stirring, until garlic turns golden brown (about 1–1.5 minutes) — watch closely so garlic does not burn.
Remove from heat and immediately add 1 tsp kasuri methi (crush between your palms as you add) and 1/2 tsp garam masala. Pour this hot tempering directly over the simmering dal. Stir gently to incorporate the flavors.
Garnish with 2 tbsp chopped fresh cilantro and squeeze in 1 tsp lemon juice. Stir and serve hot.
