Tandoori Chicken and Saffron Basmati Rice Cooked with Biryani Masala and Toasted Nuts

Trim excess fat from chicken and make 2–3 shallow slashes in each piece to help marinade penetrate. In a large bowl combine yogurt, ginger-garlic paste, lemon juice, tandoori masala, ground cumin, ground coriander, paprika, red chili powder, garam masala, salt, and 2 tbsp oil. Whisk until smooth. Add chicken, rubbing marinade into slashes and all over each piece. Cover and refrigerate at least 4 hours, preferably overnight.

Prepare and marinate chicken

Preheat oven to 220°C (425°F). Line a baking sheet with foil and place a wire rack on top. Arrange marinated chicken on the rack. Brush lightly with oil. Roast 20–30 minutes until the chicken is cooked through (internal temp 75°C / 165°F) and edges are charred slightly; broil 2–3 minutes at the end if you want more char. Alternatively, char on a hot grill for 10–15 minutes, turning until cooked. Let rest 5 minutes, then set aside.

Cook the chicken

Remove bones from thighs if preferred, and roughly shred or chop the cooked chicken into large pieces for layering in the biryani. Reserve any pan juices.

Shred or halve

Rinse basmati rice under cold water until water runs clear to remove surface starch. Soak rice in cold water for 20–30 minutes, then drain well.

Crush saffron threads lightly between your fingers and add to 3 tbsp warm milk or water. Set aside to bloom (at least 10 minutes).

Bloom saffron

In a medium pot, heat 2 tbsp ghee over medium heat. Add green cardamom pods, cloves, bay leaf and stir 30 seconds until fragrant. Add drained rice and 3.25 cups water and 1 tsp salt. Bring to a gentle boil, reduce heat to low, cover, and simmer 8–10 minutes until rice is about 90% cooked (grains still have a slight bite). Drain any excess water if present and remove whole spices if you prefer. Gently fluff rice with a fork.

Cook aromatic rice

Drizzle bloomed saffron milk over the warm rice and gently fold to distribute color and aroma.

Add saffron

Heat 2 tbsp ghee or oil in a skillet over medium heat. Add the thinly sliced onion and fry, stirring frequently, until deep golden brown and crisp (about 12–15 minutes). Remove half of the fried onions to a bowl to use as garnish/finish (this yields the 0.75 cup). Keep remaining onions in pan for the masala base.

Fry onions

To the skillet with the remaining softened onions, add slit green chilies, chopped cilantro and mint (reserve extras for garnish), 0.5 tsp garam masala, and lemon juice. Stir 1–2 minutes to release aromas. If you reserved chicken pan juices, add 1–2 tbsp now to incorporate flavor. Taste and adjust salt.

Build masala

In a small skillet, heat 1 tbsp ghee or oil over medium heat. Add cashew halves and slivered almonds and toast until lightly golden, about 3–4 minutes. Remove to a bowl. In the same pan, add 1 tbsp ghee and quickly fry raisins until plump, 30–60 seconds (optional). Combine nuts and raisins and set aside.

Toast nuts and raisins

Use a heavy-bottomed Dutch oven or deep ovenproof pot. Spread half of the cooked rice in an even layer on the bottom. Spoon half of the biryani masala/onion mixture over the rice. Arrange the shredded or halved tandoori chicken pieces evenly over this layer. Sprinkle half the fried onions, half the toasted nuts/raisins, and a tablespoon each of chopped cilantro and mint. Add remaining rice to cover the chicken gently. Top with remaining masala if any, remaining fried onions, nuts/raisins, chopped herbs, a light sprinkle of garam masala, and drizzle saffron milk over the top.

Layer biryani

Cover the pot with a tight-fitting lid. For an extra seal, place a sheet of foil under the lid or wrap the lid with a kitchen towel. Cook over the lowest heat possible on the stovetop for 20–25 minutes (place a heat diffuser or tawa under the pot if you have one). Alternatively, bake at 180°C (350°F) for 20 minutes. This gentle steam (dum) allows flavors to marry and rice to finish cooking.

Seal and steam (dum)

Let the biryani rest, covered, for 5–10 minutes after cooking. Gently fluff the rice from the edges, taking care not to break large chicken pieces. Transfer to a serving platter and garnish with remaining fresh cilantro and mint, extra fried onions, and a squeeze of lemon. Serve with raita and a simple salad.
