Rice
Rinse
Place the 2 cups aged basmati rice in a large bowl or fine-mesh sieve. Rinse under cold running water, stirring gently with your hand, until the water runs clear (about 3β5 minutes). This removes surface starch and prevents gummy rice.
Soak
Transfer the rinsed rice to a bowl and cover with 2 cups cold water. Soak for 20β30 minutes at room temperature. Soaking hydrates grains so they cook evenly and elongate. After soaking, drain the rice thoroughly in a fine-mesh sieve for 1β2 minutes.

Bring to a simmer
In a medium saucepan with a tight-fitting lid, combine 2.5 cups water, 1 tsp kosher salt, and 1 tbsp unsalted butter or oil. If using aromatics, add the cardamom pods, cloves, and bay leaf now. Bring the liquid to a gentle boil over medium-high heat.
Add rice and simmer
Once the water boils, add the drained rice and stir once to distribute. Return to a gentle simmer. Reduce heat to the lowest setting that maintains a bare simmer (often the smallest burner setting). Cover the saucepan with the lid and cook undisturbed for 12 minutes.
Steam and finish
After 12 minutes, turn off the heat but leave the lid on. Let the rice sit, covered, for an additional 10 minutes to steam. This resting step completes cooking and firms the texture. Remove the lid, discard whole aromatics (if used), and fluff the rice gently with a fork to separate grains.
Serve
Transfer rice to a serving bowl or plate. Taste and adjust salt if needed. Serve hot as an accompaniment to curries, grilled proteins, or vegetables.
Optional aromatics
If you included cardamom, cloves, or a bay leaf, they should be added to the cooking water and removed after steaming. These impart a subtle fragrance without altering texture.
