1. Preheat the Oven
Preheat your oven to 350°F (175°C).
2. Sauté Vegetables
In a large oven-safe skillet, heat the olive oil over medium heat. Add the leeks and mushrooms, and sauté until they are softened, about 5 minutes.
3. Add Ham
Stir in the diced ham and cook for another 2-3 minutes until heated through.
4. Prepare Egg Mixture
In a large bowl, whisk together the eggs, salt, and black pepper. Stir in the cheddar and Swiss cheeses.
5. Combine and Cook
Pour the egg mixture over the sautéed vegetables and ham in the skillet. Cook without stirring for about 5 minutes until the edges start to set.
6. Bake
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set in the middle and lightly golden on top.
7. Serve
Remove from the oven, let cool for a few minutes, then slice and serve warm.
