Dough and Filling
Method
Preparation and Baking
- 1
Make the Dough
In a large bowl, combine the warm milk, sugar, and yeast. Let it sit for about 5-10 minutes until frothy. Add the flour, salt, and egg, mixing until a dough forms. Incorporate the chilled butter, kneading until smooth.
- 2
Chill the Dough
Wrap the dough in plastic wrap and refrigerate for at least 2 hours or overnight for best results.
- 3
Roll Out the Dough
On a floured surface, roll out the dough into a rectangle, about 1/4 inch thick.
- 4
Add the Chocolate
Place chopped chocolate on one half of the dough. Fold the other half over and seal the edges. Roll out again into a rectangle.
- 5
Shape the Croissants
Cut the dough into triangles. Starting from the wide end, roll each triangle tightly to form a croissant shape.
- 6
Proof the Croissants
Place the croissants on a baking sheet lined with parchment paper. Cover and let rise in a warm place for about 1 hour.
- 7
Preheat the Oven
While the croissants are rising, preheat the oven to 375°F (190°C).
- 8
Bake the Croissants
Brush the croissants with egg wash and bake for 15-20 minutes or until golden brown.
- 9
Cool and Serve
Remove from the oven and let cool slightly before serving.
