Cooking Pasta

    Boil the Pasta

    In a large pot, bring water to a boil. Add 1 tablespoon of salt to the boiling water.

    Cook the Pasta

    Add 8 cups of pasta to the boiling water. Cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain the Pasta

    Once cooked, drain the pasta in a colander and set aside.

Preparing Vegetables

    Chop the Vegetables

    While the pasta is cooking, chop the zucchini, bell peppers, and carrot into bite-sized pieces.

    Sauté the Vegetables

    In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add Vegetables

    Add the chopped zucchini, bell peppers, carrot, and halved cherry tomatoes to the skillet. Sauté for about 5-7 minutes until the vegetables are tender.

    Add Spinach

    Stir in the fresh spinach and cook for an additional 2-3 minutes until wilted.

Combining & Serving

    Combine Pasta with Vegetables

    Add the drained pasta to the skillet with the sautéed vegetables. Toss gently to combine.

    Add Sauce Ingredients

    Pour in the lemon juice, and sprinkle with grated Parmesan cheese and black pepper. Toss everything together until well mixed.

    Serve

    Serve warm, garnished with additional Parmesan cheese if desired.
