Filet Mignon Preparation

Prepare the Steaks
Take the filet mignon steaks out of the refrigerator and let them rest at room temperature for about 30 minutes. This allows for more even cooking.

Rub the olive oil over both sides of the steaks. Season generously with salt and black pepper on both sides.

Mix the Herb Crust
In a bowl, combine the chopped parsley, thyme leaves, rosemary, minced garlic, breadcrumbs, and grated Parmesan cheese. Mix well until combined.

Press the herb mixture onto the top of each steak, ensuring an even coating.
Cooking the Filet Mignon

Flip the steaks and cook on the other side for another 4-5 minutes for medium-rare doneness. Adjust cooking time according to your preference.

Remove the steaks from the skillet and let them rest on a plate for 5 minutes before serving.

In a separate pot of boiling salted water, add the fresh green beans and cook for about 4-5 minutes until tender but still crisp.
