Filet Mignon Preparation

    Prepare the Steaks

    Take the filet mignon steaks out of the refrigerator and let them rest at room temperature for about 30 minutes. This allows for more even cooking.

    Season the Steaks

    Rub the olive oil over both sides of the steaks. Season generously with salt and black pepper on both sides.

Herb Crust Preparation

    Mix the Herb Crust

    In a bowl, combine the chopped parsley, thyme leaves, rosemary, minced garlic, breadcrumbs, and grated Parmesan cheese. Mix well until combined.

    Coat the Steaks

    Press the herb mixture onto the top of each steak, ensuring an even coating.

Cooking the Filet Mignon

    Sear the Steaks

    Preheat a skillet over medium-high heat. Add a bit more olive oil if necessary. Place the steaks crust side down and sear for about 3-4 minutes until golden brown.

    Flip the steaks and cook on the other side for another 4-5 minutes for medium-rare doneness. Adjust cooking time according to your preference.

    Remove the steaks from the skillet and let them rest on a plate for 5 minutes before serving.

Green Beans Preparation

    In a separate pot of boiling salted water, add the fresh green beans and cook for about 4-5 minutes until tender but still crisp.

    Drain the green beans and return them to the pot. Add butter, salt, black pepper, and lemon juice. Toss to coat evenly.
