Lamb Preparation

    Marinate the Lamb

    In a bowl, mix the olive oil, minced garlic, chopped rosemary, salt, and black pepper. Add the lamb chops, coating them well with the marinade. Let them marinate for at least 30 minutes or up to overnight in the refrigerator.

    Cook the Lamb

    Preheat a grill or skillet over medium-high heat. Once hot, add the marinated lamb chops. Cook for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Remove from heat and allow to rest for 5 minutes.

Mashed Beans Preparation

    Prepare the Beans

    In a saucepan, combine the canned white beans (drained and rinsed) and vegetable broth. Heat over medium heat until warmed through, about 5 minutes.

    Mash the Beans

    Remove the saucepan from heat and add the butter, lemon juice, salt, and black pepper. Using a potato masher or fork, mash the beans until smooth and creamy. Stir in the chopped parsley.

Assembly

    Serve the Dish

    On a plate, serve the lamb chops alongside a generous scoop of mashed beans. Garnish with additional parsley if desired.
