Sushi Rice

Method

Preparing Sushi Rice

  1. 1

    Rinse the Rice

Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

  2. 2

    Cook the Rice

In a medium saucepan, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil over medium heat, then reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the water is absorbed.

  3. 3

    Season the Rice

Once cooked, transfer the rice to a large bowl. In a small bowl, mix the rice vinegar, sugar, and salt. Gently fold this mixture into the rice while it cools. Allow the rice to cool to room temperature.

Preparing Yellowtail Filling

  1. 4

    Slice the Yellowtail

Using a sharp knife, slice the fresh yellowtail into thin, even pieces, approximately 1/4 inch thick.

  2. 5

    Prepare Soy Sauce and Wasabi

In a small bowl, combine the soy sauce and wasabi. Mix until smooth.

Assembling the Sushi

  1. 6

    Prepare the Rolling Station

Lay out a bamboo sushi mat and place a sheet of nori on top, shiny side down.

  2. 7

    Spread the Sushi Rice

Wet your hands to prevent sticking, and take a handful of sushi rice. Spread it evenly over the nori, leaving about 1 inch of space at the top.

  3. 8

    Add Yellowtail

Arrange a few slices of yellowtail horizontally across the center of the rice.

  4. 9

    Roll the Sushi

Using the bamboo mat, carefully roll the sushi away from you, tucking the filling inside. Roll tightly but not too tight to avoid squeezing out the filling.

  5. 10

    Slice the Sushi

Using a sharp knife, slice the rolled sushi into 6-8 pieces, wiping the knife with a damp cloth between cuts to ensure clean slices.

  6. 11

    Garnish and Serve

Sprinkle sesame seeds on top if desired and garnish with chopped chives. Serve with pickled ginger on the side.
