Method

Prepare Sushi Rice

    Wash the Rice

    Place the sushi rice in a fine-mesh sieve and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let sit for 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice using a wooden spoon or spatula. Allow the rice to cool to room temperature.

Prepare the Filling

    Slice the Fillings

    Cut the fresh salmon into thin strips. Avocado should be sliced into thin wedges, and cucumber should be julienned.

    Prepare Cream Cheese

    If the cream cheese is too firm, let it sit at room temperature for a few minutes to soften for easier spreading.

Assemble the Augusta Roll

    Prepare the Rolling Mat

    Lay a bamboo sushi rolling mat on a flat surface and place a sheet of nori (seaweed) shiny side down on top of it.

    Spread the Rice

    Wet your hands to prevent sticking, then take a handful of prepared sushi rice and evenly spread it over the nori, leaving about 1 inch at the top edge.

    Add Fillings

    Lay strips of salmon, avocado wedges, cucumber, and a thin layer of cream cheese horizontally across the rice-covered nori.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Moisten the top edge of the nori with a little water to seal the roll.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces, wiping the knife with a damp cloth between cuts to keep the edges clean.

    Arrange the sliced rolls on a serving platter. Serve with soy sauce, a dollop of wasabi, and pickled ginger on the side.
