Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh sieve and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium pot, combine the rinsed sushi rice and water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit, covered, for an additional 10 minutes.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Fluff the rice with a fork and gradually mix in the vinegar mixture. Allow the rice to cool to room temperature.

Prepare Vegetables

    Slice the Vegetables

    Using a sharp knife, julienne the cucumber, carrot, avocado, and red bell pepper into thin strips.

Assemble the Roll

    Lay Out the Nori

    Place one nori sheet, shiny side down, on a bamboo sushi mat or a clean surface.

    Spread the Rice

    Wet your hands to prevent sticking, then take about 1/2 cup of sushi rice and evenly spread it over the nori, leaving about an inch at the top edge.

    Add the Fillings

    Arrange a few strips of cucumber, carrot, avocado, and red bell pepper horizontally across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully lift the edge of the mat closest to you and start rolling the sushi away from you. Apply gentle pressure to keep the roll tight.

    Seal the Roll

    Once rolled, use a little water on the edge of the nori to seal the roll. Let it sit seam side down for a minute.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

Serve

    Sprinkle sesame seeds on top of the sliced rolls and serve with soy sauce on the side for dipping.
