Preparation of Tuna

    Prepare the Ahi Tuna

    Pat the ahi tuna steak dry using paper towels. Season both sides with salt and black pepper.

    Sear the Tuna

    In a skillet, heat sesame oil over medium-high heat. Once hot, sear the tuna steak for about 30 seconds on each side until it is browned but still rare in the center. Remove from heat and let it cool.

    Slice the Tuna

    Once cooled, use a sharp knife to slice the tuna steak into thin pieces, about 1/4 inch thick.

Preparation of Ponzu Sauce

    Mix the Ponzu Ingredients

    In a bowl, whisk together soy sauce, rice vinegar, lemon juice, mirin, and dashi stock until well combined.

    Add Flavorings

    Stir in chopped green onions and chili flakes to the ponzu sauce.

Serving the Dish

    Plate the Dish

    Arrange the sliced tuna on a serving plate. Drizzle with ponzu sauce.

    Sprinkle sesame seeds and add microgreens on top for garnish.

    Serve the tuna tataki immediately with extra ponzu sauce on the side.
