Sushi Rice

Method

Preparing Sushi Rice

  1. 1

    Rinse the Rice

In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy.

  2. 2

    Cook the Rice

In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and water is absorbed.

  3. 3

    Season the Rice

Once the rice is cooked, remove it from heat and let it sit, covered, for 10 minutes. In a small bowl, mix rice vinegar, sugar, and salt. Gently fold this mixture into the rice using a wooden spoon or rice paddle to season it. Allow the rice to cool to room temperature.

Preparing Tuna Filling

  1. 4

    Mix Tuna Filling

In a medium bowl, combine drained canned tuna, mayonnaise, soy sauce, wasabi paste, and chopped green onion. Mix well until all ingredients are combined.

Assembling Sushi Rolls

  1. 5

    Prepare Nori Sheets

Lay a bamboo sushi mat on a flat surface and place a sheet of nori, shiny side down, on the mat.

  2. 6

    Spread Sushi Rice

With wet hands, take about 1 cup of prepared sushi rice and evenly spread it over the nori, leaving about 1 inch at the top edge free of rice.

  3. 7

    Add Tuna Filling

Place a line of tuna filling across the center of the rice-covered nori.

  4. 8

    Roll the Sushi

Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly as you roll. Roll it tightly to ensure the filling is secure.

  5. 9

    Slice and Serve

Using a sharp knife, slice the roll into 6-8 pieces. Sprinkle sesame seeds on top if desired. Serve with pickled ginger and soy sauce.
