Mix the Salsa
In a large bowl, combine diced tomatoes, red onion, cilantro, minced jalapeño, lime juice, and salt. Stir gently until well mixed.

Chill the Salsa
Cover the salsa with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Prepare the Ingredients
Cube the Velveeta cheese and soften the cream cheese. Open the can of diced tomatoes with green chilies and set aside.

Melt the Cheese
In a medium saucepan over low heat, combine cubed Velveeta, softened cream cheese, and milk. Stir continuously until melted and smooth.

Add Flavor
Stir in the diced tomatoes with green chilies, chopped jalapeño, and chili powder. Mix thoroughly and heat until warmed through.

Serve the Queso
Transfer the queso to a serving dish and keep warm until ready to serve.
House-Made Chips

Prepare the Tortillas
Cut each corn tortilla into six wedges.

Heat the Oil
In a large pot or deep frying pan, heat vegetable oil to 350°F (175°C).

Fry the Chips
Fry the tortilla wedges in batches until golden brown and crispy, about 2-3 minutes per batch. Remove with a slotted spoon and drain on paper towels.

While still warm, sprinkle the chips with salt to taste.
