Prepare the Jalapeños
Preheat the oven to 200°C (400°F). Slice the jalapeños in half lengthwise and remove the seeds and membranes carefully to reduce heat levels.

Cook the Chorizo
In a skillet over medium heat, cook the chorizo sausage until browned and cooked through, about 5-7 minutes. Drain excess fat.

Mix the Filling
In a mixing bowl, combine the cooked chorizo and cream cheese. Mix until well combined and smooth.

Stuff the Jalapeños
Spoon the chorizo and cream cheese mixture into each jalapeño half, filling them generously.

Bread the Jalapeños
Dip each stuffed jalapeño into breadcrumbs, ensuring they are fully coated.

Fry the Jalapeños
In a deep skillet, heat vegetable oil over medium-high heat. Once hot, carefully place the breaded jalapeños in the oil and fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Prepare the Queso
In a medium saucepan over medium heat, combine cheddar cheese, cream cheese, and milk. Stir continuously until melted and smooth.

Add Flavor
Add the diced tomatoes with green chilies, cumin, salt, and black pepper to the cheese mixture. Stir well and cook for an additional 2-3 minutes until heated through.

Transfer the queso dip to a serving bowl and serve warm alongside the fried stuffed jalapeños.
