Prepare Sushi Rice

    Rinse the Rice

    In a fine mesh strainer, rinse 2 cups of sushi rice under cold water until the water runs clear. This step removes excess starch.

    Cook the Rice

    In a pot, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit covered for another 10 minutes.

    Season the Rice

    In a small bowl, mix 3 tablespoons of rice vinegar, 1 tablespoon of sugar, and 0.5 teaspoons of salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Prepare Fillings

    Slice Salmon

    Using a sharp knife, slice the fresh salmon into thin strips.

    Prepare Avocado

    Cut the avocado in half, remove the pit, and scoop out the flesh. Slice the avocado into thin strips.

    Peel the cucumber if desired, then slice it into thin strips.

Assemble Sushi Rolls

    With wet hands, take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

    Lay strips of salmon, avocado, cucumber, and a line of cream cheese across the rice at the bottom edge.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly. Roll until it's sealed, using a bit of water to help seal the edge if necessary.

    Using a sharp knife, wet the blade and slice the roll into 6-8 pieces. Wipe the knife between cuts to maintain clean edges.
