Method
Prepare Sushi Rice
- 1
Rinse the Rice
Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.
- 2
Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium-high heat. Reduce heat to low, cover, and simmer for 18-20 minutes, or until the water is absorbed.
- 3
Season the Rice
In a small bowl, whisk together rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow to cool to room temperature.
Prepare Spicy Tuna Filling
- 4
Chop the Tuna
Using a sharp knife, finely chop the sushi-grade tuna into small cubes.
- 5
Mix Tuna with Spices
In a medium bowl, combine chopped tuna, mayonnaise, sriracha sauce, sesame oil, and chopped green onion. Mix until well combined.
Assemble the Rolls
- 6
Lay Nori on Bamboo Mat
Place a bamboo sushi mat on a flat surface and lay a sheet of nori on top, shiny side down.
- 7
Spread the Rice
Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.
- 8
Add Spicy Tuna Filling
Place a line of spicy tuna filling across the center of the rice.
- 9
Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge of the nori with a little water.
- 10
Slice the Rolls
Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts to ensure clean slices.
Serve
- 11
Plate the Rolls
Arrange the sliced spicy tuna rolls on a serving platter.
- 12
Add Condiments
Serve with soy sauce, pickled ginger, and wasabi on the side for dipping.
