Prepare Sushi Rice

    Rinse the Rice

    Rinse 1 cup of sushi rice under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    Combine the rinsed sushi rice and 1.5 cups of water in a rice cooker or pot. If using a pot, bring to a boil, then reduce to low heat and cover, cooking for 20 minutes or until water is absorbed.

    Season the Rice

    In a small bowl, mix 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and 0.5 teaspoons of salt. Heat briefly in the microwave to dissolve the sugar. Once the rice is cooked, transfer it to a bowl and gently fold in the vinegar mixture. Let it cool to room temperature.

    Prepare the Salmon

    Finely chop the 200 grams of fresh salmon fillet into small pieces.

    Mix the Filling

    In a bowl, combine the chopped salmon, 2 tablespoons of sriracha sauce, 1 tablespoon of mayonnaise, 2 tablespoons of chopped green onions, and 1 teaspoon of sesame oil. Add 0.5 teaspoons of salt and mix thoroughly.

Assemble the Rolls

    Prepare the Vegetables

    Julienne the medium cucumber and slice the medium avocado thinly.

    Lay Out the Nori

    Place a sheet of nori on a bamboo sushi mat, shiny side down.

    Wet your hands with water to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving a small border at the top.

    Place a line of the salmon filling, cucumber, and avocado in the center of the rice-covered nori.

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep the roll tight. Seal the edge of the nori with a little water.

    Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts to prevent sticking.
