Prepare Sushi Rice

    Rinse and Cook Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or saucepan. Cook according to rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes until rice is tender.

    Season the Rice

    Once cooked, remove the rice from heat and let it sit covered for 10 minutes. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the rice using a wooden spatula, being careful not to mash the grains.

    Spread the seasoned rice onto a baking sheet to cool to room temperature. Cover with a damp cloth to keep moist.

    Wash and slice the cucumber into thin strips. Cut the avocado in half, remove the pit, scoop out the flesh, and slice it into thin strips.
