Prepare Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or saucepan. Cook according to rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes until rice is tender.

Once cooked, remove the rice from heat and let it sit covered for 10 minutes. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the rice using a wooden spatula, being careful not to mash the grains.

Spread the seasoned rice onto a baking sheet to cool to room temperature. Cover with a damp cloth to keep moist.

Prepare Smoked Salmon
Cut the smoked salmon into thin strips or small pieces, ensuring they are easy to roll within the sushi.

Place a nori sheet shiny side down on a bamboo sushi mat. Wet your hands to prevent sticking.

Arrange smoked salmon, cucumber, avocado, and cream cheese in a line across the center of the rice-covered nori.
