Wash the Rice
Place the short-grain sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

Cook the Rice
Combine the rinsed rice and 1.2 cups of water in a rice cooker. Cook according to the manufacturer's instructions. If using a pot, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow to cool to room temperature.

Cook the Eggs
Heat cooking oil in a non-stick skillet over medium heat. Pour in the egg mixture, swirling to cover the bottom of the pan evenly. Cook until the edges set, then gently lift the edges and tilt the pan to allow uncooked egg to flow underneath. Cook until set but still slightly soft in the center.

Prepare the Nori
Cut the nori sheets in half to create rectangles.

Lay a piece of nori on a bamboo sushi mat. Wet your hands with water to prevent sticking, then take a small handful of seasoned rice and spread it evenly over the nori, leaving a border at the top.

Add Toppings
Place a few strips of the egg mixture on top of the rice, followed by a small amount of smelt fish, chopped green onions, and a sprinkle of sesame seeds.

Roll the Sushi
Using the bamboo mat, roll the nori tightly away from you, pressing gently to form a compact roll. Seal the edge of the nori with a little water.

With a sharp knife, slice the roll into bite-sized pieces. Serve with extra soy sauce on the side for dipping.
