    Place the sushi rice in a fine-mesh strainer or a large bowl. Rinse the rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy.

    After rinsing, soak the rice in water for about 30 minutes. This helps to achieve the perfect texture.

    Cook the Rice

    In a medium saucepan, combine the soaked sushi rice and 2.5 cups of water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for about 18 minutes, or until the water is fully absorbed.

    While the rice is cooking, combine the rice vinegar, sugar, and salt in a small saucepan over low heat. Stir until the sugar and salt are completely dissolved. Remove from heat and set aside.
