Prepare Sushi Rice

    Rinse and Cook the Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and 2.5 cups of water in a rice cooker and cook according to the manufacturer's instructions.

    Season the Rice

    Once cooked, transfer the rice to a large bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold the mixture into the rice with a wooden spoon and let it cool to room temperature.

Prepare Shrimp

    Marinate the Shrimp

    In a bowl, combine peeled shrimp, soy sauce, sesame oil, minced garlic, and grated ginger. Allow it to marinate for about 15 minutes.

    Cook the Shrimp

    Heat a pan over medium heat. Add the marinated shrimp and cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat and let cool.

Assembling the Sushi

    Prepare the Nori

    Place a bamboo sushi mat on a flat surface. Lay a sheet of nori, shiny side down, on the mat.

    Spread the Rice

    Wet your fingers with water to prevent sticking. Take about a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

    Add Fillings

    Place a few pieces of cooked shrimp, julienned cucumber, avocado slices, and julienned carrot across the center of the rice.

    Roll the Sushi

    Using the sushi mat, carefully roll the nori away from you while pressing gently to shape the sushi. Roll it tightly until you reach the border. Moisten the border with a little water to seal.

    Slice and Serve

    Use a sharp knife to slice the rolled sushi into bite-sized pieces. Serve with wasabi, pickled ginger, and additional soy sauce on the side.
