Preparation of the Salad Base

Rehydrate the Seaweed
Place the dried wakame seaweed in a bowl and cover it with warm water. Let it soak for about 10-15 minutes until it expands and becomes tender. Drain and set aside.

Prepare the Vegetables
While the seaweed is soaking, wash the cucumber, carrot, and radish. Julienne the cucumber and carrot, and slice the radish thinly. Combine all the vegetables in a large mixing bowl.

Prepare Nori
Using scissors, cut the nori sheets into thin strips. Set aside for later.
Preparing the Dressing

Mix the Dressing Ingredients
In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, sugar, and salt until the sugar dissolves. Adjust the seasoning if necessary.

Add Sesame Seeds and Chili
Stir in the toasted sesame seeds and black sesame seeds into the dressing. Add chili flakes according to your taste preference.
Assembling the Salad

Combine Ingredients
In the mixing bowl with the vegetables, add the rehydrated wakame seaweed and the nori strips.

Dress the Salad
Pour the dressing over the salad and gently toss everything together until the vegetables and seaweed are well coated.

Serve
Transfer the seaweed salad to a serving dish. Optionally, garnish with additional sesame seeds or chili flakes before serving.
