Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear, about 2-3 minutes. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice and 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes until water is absorbed.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture while fanning the rice to cool it.

Prepare Scallops

    Sear the Scallops

    Heat olive oil in a skillet over medium-high heat. Season scallops with salt and pepper. Once the oil is hot, add scallops and sear for about 2-3 minutes on each side until they are golden brown and cooked through. Remove from heat and let them cool slightly.

Assemble Sushi

    Lay out Nori

    Place a sheet of nori on a bamboo sushi mat, shiny side down.

    Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving about an inch at the top edge.

    Place 3 seared scallops in a line across the center of the rice.

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Seal the edge with a little water.

    Using a sharp knife, slice the sushi roll into bite-sized pieces. Serve with soy sauce, wasabi, and pickled ginger on the side.
