Method
Prepare Sushi Rice

Rinse the Sushi Rice
Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed rice and 1.25 cups of water. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for an additional 10 minutes.

Season the Rice
In a small bowl, mix together the rice vinegar, sugar, and salt. Gently fold this mixture into the cooked rice using a wooden spatula, being careful not to mash the grains.
Assemble Sushi

Prepare the Nori
Lay a sheet of nori on a bamboo sushi mat, shiny side down.

Spread the Sushi Rice
With wet hands, take about 1/4 of the sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge free of rice.

Add Salmon Eggs
Place a generous amount of salmon roe in a line across the center of the rice-covered nori.

Roll the Sushi
Using the bamboo mat, gently roll the nori away from you, applying a little pressure to form a tight roll. Once rolled, use a sharp knife to slice the roll into bite-sized pieces.
