Make the Dough
In a large bowl, combine the all-purpose flour and salt. Gradually add boiling water while stirring with chopsticks or a fork until a shaggy dough forms. Knead the dough on a lightly floured surface for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Filling
In a medium bowl, mix together the ground pork, green onions, minced garlic, grated ginger, soy sauce, sesame oil, and black pepper. Mix well until all ingredients are combined. Set aside.
Potsticker Assembly

Form the Potstickers
After the dough has rested, divide it into 12 equal pieces. Roll each piece into a thin round wrapper. Place about 1 tablespoon of the filling in the center of each wrapper. Moisten the edges with water, fold the wrapper over the filling, and press to seal. You can make pleats for a decorative finish if desired.

Fry the Potstickers
In a large skillet, heat the vegetable oil over medium-high heat. Arrange the potstickers in the skillet, making sure they are not touching. Cook for about 2-3 minutes until the bottoms are golden brown. Add 1/4 cup of water to the skillet and cover immediately. Let them steam for about 5 minutes until the water has evaporated and the potstickers are cooked through.

In a small bowl, whisk together sweet chili sauce, soy sauce, and lemon juice until well combined. Set aside for dipping.
