Prepare Sushi Rice

Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a pot, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the water is absorbed.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, remove from heat and gently fold in the vinegar mixture. Allow cooling to room temperature.
Cook the Octopus

Prepare the Boiling Water
In a large pot, bring 4 cups of water to a boil. Add salt, bay leaves, and black peppercorns.

Cook the Octopus
Submerge the cleaned octopus in the boiling water. Cover and cook on a low simmer for 30-40 minutes or until tender. Remove from water and let cool.

Slice the Octopus
Once cooled, slice the octopus into thin rounds for sushi assembly.
Assemble Sushi

Prepare Nori Sheets
Lay a nori sheet on a bamboo sushi mat, shiny side down.

Add Sushi Rice
Wet your hands to prevent sticking and take a handful of sushi rice. Spread it evenly over the nori, leaving an inch of space at the top.

Add Octopus
Place slices of octopus on top of the rice, arranging them evenly.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge of the nori with a little water.

Slice the sushi roll into bite-sized pieces using a sharp knife. Serve with soy sauce, wasabi, and pickled ginger. Sprinkle with sesame seeds if desired.
