Mochi Dough

Ice Cream Filling

Method

Mochi Dough Preparation

  1. 1

    Mix Ingredients

In a large mixing bowl, combine the sweet rice flour and granulated sugar. Gradually add water while stirring to form a smooth batter.

  2. 2

    Cook the Mixture

Transfer the mixture to a microwave-safe bowl. Cover it loosely with plastic wrap and microwave on high for 1 minute. Stir the mixture, then microwave for another minute. Repeat this process for a total of 3 minutes until the dough becomes slightly translucent and sticky.

  3. 3

    Prepare Work Surface

Dust a clean surface with cornstarch to prevent sticking. Carefully transfer the mochi dough onto the cornstarch-dusted surface.

  4. 4

    Shape the Mochi

Using a rolling pin, roll the mochi dough into a rectangle about 1/4 inch thick. Dust the top with additional cornstarch to prevent sticking. Cut the dough into squares, approximately 3 inches by 3 inches.

Assembly

  1. 5

    Prepare Ice Cream

Scoop the ice cream into small balls, roughly 1 inch in diameter, and place them on a plate. Freeze the ice cream balls for about 30 minutes to firm them up.

  2. 6

    Wrap Ice Cream with Mochi

Take one mochi square, place a ball of ice cream in the center, and fold the edges of the mochi over the ice cream. Pinch to seal and shape it into a ball. Repeat this with the remaining mochi squares and ice cream balls.

Final Steps

  1. 7

    Freeze Mochi Ice Cream

Place the finished mochi ice cream balls on a plate dusted with cornstarch and freeze for at least 1 hour to set completely.

  2. 8

    Serve

Once set, dust off excess cornstarch and serve the mochi ice cream immediately. Enjoy your delicious homemade treat!
