In a large mixing bowl, combine the sweet rice flour and granulated sugar. Gradually add water while stirring to form a smooth batter.

Transfer the mixture to a microwave-safe bowl. Cover it loosely with plastic wrap and microwave on high for 1 minute. Stir the mixture, then microwave for another minute. Repeat this process for a total of 3 minutes until the dough becomes slightly translucent and sticky.

Dust a clean surface with cornstarch to prevent sticking. Carefully transfer the mochi dough onto the cornstarch-dusted surface.

Shape the Mochi
Using a rolling pin, roll the mochi dough into a rectangle about 1/4 inch thick. Dust the top with additional cornstarch to prevent sticking. Cut the dough into squares, approximately 3 inches by 3 inches.

Scoop the ice cream into small balls, roughly 1 inch in diameter, and place them on a plate. Freeze the ice cream balls for about 30 minutes to firm them up.
