Method
Preparation
- 1
Mix the Dry Ingredients
In a mixing bowl, combine the glutinous rice flour and sugar. Stir well to ensure they are evenly mixed.
- 2
Add Water
Gradually add water to the flour mixture, stirring continuously until you achieve a smooth and lump-free batter.
- 3
Incorporate Optional Ingredients
If desired, add a drop of food coloring to the mixture for coloring. You can also mix in sweetened coconut flakes if you prefer.
Cooking
- 4
Steam the Mixture
Pour the mixture into a heatproof dish lined with parchment paper. Place the dish in a steamer over boiling water and steam for about 20 minutes or until the mixture is cooked through and slightly firm.
- 5
Cool the Mochi
Remove the dish from the steamer and let it cool for a few minutes. Dust a clean surface with cornstarch to prevent sticking.
- 6
Shape the Mochi
Once cooled, transfer the mochi onto the cornstarch-dusted surface. Use a rolling pin to flatten it to about 1/2 inch thickness. Cut into squares or use a cookie cutter for shapes.
- 7
Fill with Red Bean Paste (optional)
If you are using red bean paste, take a piece of mochi, flatten it in your palm, and place a small amount of red bean paste in the center. Fold the edges over to enclose the filling and roll it into a ball.
