Gather all the ingredients needed for the quesadilla. If using cooked chicken, ensure it is diced into small pieces. If using black beans, rinse and drain them.

Dice the bell pepper into small pieces to make them easy to eat for kids.

In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Assemble Quesadilla
Place one tortilla in the skillet. On one half of the tortilla, sprinkle 1/2 cup of shredded cheese, followed by 1/4 cup of the cooked chicken or black beans, and a few pieces of diced bell pepper.

Fold the tortilla in half over the filling and press down gently. Cook for about 2-3 minutes until the bottom is golden brown and the cheese begins to melt.
