Method

Preparation

  1. 1

    Prepare Ingredients

Gather all the ingredients needed for the quesadilla. If using cooked chicken, ensure it is diced into small pieces. If using black beans, rinse and drain them.

  2. 2

    Chop Vegetables

Dice the bell pepper into small pieces to make them easy to eat for kids.

Cooking

  1. 3

    Heat the Pan

In a large skillet, heat 1 tablespoon of olive oil over medium heat.

  2. 4

    Assemble Quesadilla

Place one tortilla in the skillet. On one half of the tortilla, sprinkle 1/2 cup of shredded cheese, followed by 1/4 cup of the cooked chicken or black beans, and a few pieces of diced bell pepper.

  3. 5

    Fold and Cook

Fold the tortilla in half over the filling and press down gently. Cook for about 2-3 minutes until the bottom is golden brown and the cheese begins to melt.

  4. 6

    Flip and Finish Cooking

Carefully flip the quesadilla using a spatula. Add another tablespoon of olive oil if needed. Cook for an additional 2-3 minutes until the other side is golden brown and the cheese is fully melted.

  5. 7

    Repeat

Remove the cooked quesadilla from the skillet and repeat the process with the remaining tortillas and filling.

Serving

  1. 8

    Cut and Serve

Once all quesadillas are cooked, cut each one into wedges. Serve warm with optional sour cream, salsa, and avocado slices on the side.
