Preparing Sushi Rice

Rinse the Rice
Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit, covered, for an additional 10 minutes.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture using a wooden spoon. Allow the rice to cool to room temperature.

Slice the Salmon
Using a sharp knife, slice the fresh salmon into thin strips, about 1/4 inch thick.

Slice the Cucumber
Peel the cucumber if desired, then slice it lengthwise into thin strips.

Prepare Cream Cheese
Soften the cream cheese at room temperature for easier spreading.
Assembling the Jesse Roll

Start with Nori
Lay a sheet of nori, shiny side down, on a bamboo sushi mat.

Spread the Rice
Wet your hands to prevent sticking and take about 1/2 cup of sushi rice. Spread it evenly over the nori, leaving about 1 inch at the top edge.

Place a few strips of salmon, avocado, cucumber, and a thin layer of cream cheese in the center of the rice.

Roll the Sushi
Using the bamboo mat, carefully lift the edge of the mat closest to you and start rolling away from you. Roll tightly but not too tight to avoid squishing the fillings. Seal the edge with a little water.

Using a sharp, wet knife, slice the roll into 6-8 pieces.
