Guacamole Preparation

Prepare the Avocados
Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl.

Add Ingredients
Add the lime juice, chopped red onion, diced tomato, chopped cilantro, jalapeño (if using), salt, and black pepper to the mashed avocado.

Mix Together
Stir all the ingredients together until well combined. Taste and adjust seasoning if necessary.

Store or Serve
Cover the guacamole with plastic wrap pressed directly against its surface to prevent browning and set aside until ready to serve.
House-Made Chips Preparation

Cut the Tortillas
Stack the corn tortillas and cut them into quarters to form triangle-shaped chips.

Heat the Oil
In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chips
Carefully add a handful of tortilla triangles to the hot oil, making sure not to overcrowd the pan. Fry until they are golden brown and crispy, about 2-3 minutes.

Drain and Season
Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain. While still hot, sprinkle with salt.

Continue frying the remaining tortilla triangles in batches until all are cooked. Allow to cool slightly before serving.
