Prepare Sushi Rice

    Rinse and Cook Rice

    Rinse 2 cups of sushi rice under cold water until the water runs clear. Combine the rinsed rice and 2.5 cups of water in a rice cooker. Cook according to the rice cooker instructions. Once cooked, let the rice sit for 10 minutes.

    In a small saucepan, combine 3 tbsp rice vinegar, 1 tbsp sugar, and 1 tsp salt. Heat over low heat until the sugar and salt dissolve. Gently fold this mixture into the cooked sushi rice, being careful not to mash the grains.

    Slice the Vegetables

    Cut the avocado in half, remove the pit, and slice it into thin strips. Peel the cucumber and slice it into thin strips as well.

    Prepare Crab Meat

    If using imitation crab, shred it into pieces. If using real crab meat, ensure it is flaked and ready to use.

    Soften the cream cheese slightly at room temperature for easier spreading.

Assemble the Roll

    Lay Out Nori

    Place a bamboo sushi mat on a flat surface. Lay one sheet of nori, shiny side down, on the mat.

    Wet your hands to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

    In the center of the rice, place a line of avocado, cucumber, crab meat, and a thin layer of cream cheese.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water.

    Use a sharp knife to slice the roll into 6-8 pieces, wiping the knife with a damp cloth after each cut to keep it clean.
