Queso Dip

House-made Chips

Method

Queso Dip

  1. 1

    Melt the Cheeses

In a medium saucepan over medium heat, combine the Monterey Jack cheese and cream cheese. Stir until melted and smooth.

  2. 2

    Add Chiles and Seasoning

Stir in the canned green chiles, milk, garlic powder, onion powder, salt, and pepper. Continue to cook until heated through and creamy, about 5 minutes.

Ranch Beans

  1. 3

    Sauté the Aromatics

In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.

  2. 4

    Combine Beans and Seasoning

Add the pinto beans and ranch seasoning mix to the skillet. Stir to combine and cook for an additional 5-7 minutes until heated through.

House-made Chips

  1. 5

    Heat the Oil

In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

  2. 6

    Fry the Tortillas

Cut the corn tortillas into triangles. Fry in batches for 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.

  3. 7

    Season the Chips

Sprinkle with salt while still warm. Repeat with remaining tortillas.
