Shrimp Preparation

Season the Shrimp
In a bowl, toss the peeled and deveined shrimp with salt and black pepper to evenly coat them. Set aside for 10 minutes to marinate.

Prepare the Tempura Batter
In a separate bowl, mix the cornstarch with ice water until you achieve a smooth batter consistency. The batter should be slightly thick but still pourable.

Make the Firecracker Sauce
In a bowl, combine mayonnaise, Sriracha sauce, honey, lime juice, garlic powder, and chopped green onions. Mix all ingredients until smooth and well combined. Adjust seasoning to taste.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small amount of the batter into it; if it sizzles, it's ready.

Fry the Shrimp
Dip each seasoned shrimp into the tempura batter, allowing excess batter to drip off. Carefully place the battered shrimp into the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove the shrimp and place them on paper towels to drain excess oil.

Toss with Firecracker Sauce
In a large mixing bowl, add the fried shrimp and pour the firecracker sauce over them. Toss gently to coat each shrimp evenly with the sauce.
