Preparing Sushi Rice

Rinse the Rice
Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear to remove excess starch.

Cook the Rice
Transfer the rinsed rice to a rice cooker or pot, add 2.5 cups of water, and cook according to the rice cooker's instructions or bring to a boil, reduce to a simmer, cover, and cook for 20 minutes.

Season the Rice
Once cooked, transfer the rice to a large bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold the vinegar mixture into the rice while fanning it to cool.

In a mixing bowl, combine the chopped shrimp, cream cheese, Sriracha sauce, and chopped green onions. Mix until well incorporated.
Rolling the Sushi

Prepare the Rolling Area
Place a bamboo sushi mat on a flat surface and lay a sheet of nori, shiny side down, on the mat.

Wet your hands to prevent sticking, take about 1 cup of sushi rice, and evenly spread it over the nori, leaving a 1-inch border at the top.

Place a line of the shrimp filling along the center of the rice-covered nori.

Roll the Sushi
Starting from the bottom, use the bamboo mat to roll the sushi tightly away from you. Press gently but firmly to ensure it holds together.

Use a little water to moisten the top edge of the nori to help seal the roll as you finish rolling.

Using a sharp knife, slice the roll into 6-8 pieces, wiping the knife with a damp cloth between cuts.
