Method

Calamari Preparation

  1. 1

    Prepare the Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels. This ensures that the coating adheres well.

  2. 2

    Season the Flour

In a shallow bowl, mix the all-purpose flour, togarashi pepper, salt, and black pepper.

  3. 3

    Prepare the Eggs

In another shallow bowl, beat the eggs until well blended.

  4. 4

    Prepare the Panko

In a third shallow bowl, place the panko breadcrumbs.

Coating and Frying

  1. 5

    Coat the Calamari

Dredge each calamari ring in the seasoned flour, shaking off any excess. Dip into the beaten eggs, then coat evenly with panko breadcrumbs.

  2. 6

    Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small piece of the coated calamari into the oil; it should sizzle immediately.

  3. 7

    Fry the Calamari

Carefully add the coated calamari rings to the hot oil in batches, ensuring not to overcrowd the pan. Fry for 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and place them on a paper towel-lined plate to drain excess oil.

Serving

  1. 8

    Serve the Calamari

Arrange the crispy fried calamari on a serving platter and serve with sweet chili sauce on the side for dipping.
