Method

Prepare Sushi Rice

    Rinse and Cook Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and 2.5 cups of water in a rice cooker and cook according to the manufacturer's instructions. If cooking on the stove, bring to a boil, then cover and simmer for 20 minutes.

    Season Rice

    Once the rice is cooked, transfer it to a large bowl. In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Pour this mixture over the warm rice and gently fold it in using a wooden spatula. Allow the rice to cool to room temperature.

    Slice Vegetables

    Cut the avocado in half, remove the pit, and slice it thinly. Peel and julienne the cucumber into thin strips.

    Prepare Crab Filling

    If using imitation crab, shred it into smaller pieces. If using fresh crab meat, ensure it is clean and ready to use.

    Mix Spicy Mayo

    In a small bowl, mix the spicy mayo with a little sriracha sauce for added flavor, if desired.

Assemble Sushi Rolls

    Lay Nori

    Place a bamboo sushi mat on a flat surface and lay a sheet of nori, shiny side down, on the mat.

    Add Rice

    Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch of space at the top.

    Layer Fillings

    In the center of the rice, add a line of crab meat, avocado slices, cucumber strips, and a drizzle of spicy mayo. Be careful not to overfill.

    Roll the Sushi

    Using the bamboo mat, carefully lift the edge of the mat closest to you and start rolling it away from you, tucking the fillings in as you go. Roll until you reach the bare edge of the nori. Wet the edge of the nori to seal the roll.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts to ensure clean slices.

Garnish and Serve

    Sprinkle sesame seeds on top of the sliced sushi rolls. Chop green onions and sprinkle over the rolls for added flavor.
