Cooking Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh sieve and rinse it under cold water until the water runs clear. This helps to remove excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes or until the water is absorbed.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture with a wooden spatula. Allow the rice to cool to room temperature.

Preparing the Filling

    Cut the Vegetables

    Julienne the cucumber and slice the avocado into thin strips.

    Prepare the Crab

    If using imitation crab meat, shred it into small pieces.

Rolling the Sushi

    Set Up Your Workspace

    Lay out a bamboo sushi mat on a clean surface. Place a sheet of nori, shiny side down, on the mat.

    Spread the Rice

    Wet your hands to prevent sticking, then grab a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

    Add the Filling

    Arrange cucumber, avocado, and crab meat in a line across the center of the rice-covered nori.

    Roll the Sushi

    Using the bamboo mat, lift the edge closest to you and begin rolling it away from you, pressing gently but firmly to keep the roll tight. Continue rolling until you reach the edge of the nori.

    Seal the Roll

    Dampen the top edge of the nori with a little water to help seal the roll. Press gently to secure.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

Serving

    Prepare the Dipping Sauce

    In a small bowl, combine soy sauce and wasabi to taste.

    Sprinkle sesame seeds on top of the sushi rolls and serve with the dipping sauce.
