Prepare the Tofu
Start by pressing the tofu to remove excess moisture. Wrap the block of tofu in a clean kitchen towel and place a heavy object on top. Leave it for about 15 minutes, then cut the tofu into 1-inch cubes.

Make the Sauce
In a small bowl, whisk together the soy sauce, sesame oil, honey (or maple syrup), cornstarch, and water until smooth. Set aside.

Cook the Tofu
Heat a large skillet or wok over medium-high heat. Add a tablespoon of oil and then add the cubed tofu. Cook for 5-7 minutes, turning occasionally, until golden brown. Remove the tofu from the skillet and set aside.

Stir-Fry the Vegetables
In the same skillet, add another tablespoon of oil if necessary. Add the broccoli, bell pepper, carrot, and snap peas. Stir-fry for about 4-5 minutes until the vegetables are tender but still crisp.

Combine and Serve
Return the tofu to the skillet with the vegetables. Pour the sauce over the mixture and stir well to combine. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly. Serve hot over rice or noodles.
